Spicy Pork Roast

Ingredients

check salt 1 teaspoon salt

check ground ginger 1 teaspoon ground ginger

check nutmeg 1/2 teaspoon nutmeg

check cinnamon 1/2 teaspoon cinnamon

check rolled pork loin roast 4-5 lbs. rolled pork loin roast

Directions:

Combine salt, ginger, nutmeg and cinnamon; rub into roast. Place roast, fat side up, on a rack in a shallow baking pan. Bake, uncovered, at 325 degrees for 2 - 2 1/2 hours or until meat thermometer reads 160 degrees. Cover and let stand 15 minutes before slicing.
