Yield: Makes about 2 quarts.
Beat eggs and sugar in large mixing bowl until well blended. Stir in evaporated milk, peppermint extract and food colring. Gently stir in grated chocolate. Refrigerate until well chilled. Pour into ice cream freezer container. Churn and freeze according to manufacturer's directions.
