Cool Tuna Salad Pepper Cups

Yield: 4 servings

Ingredients

Add large green peppers to shopping list 2 large green peppers

Add (6 ounces each) tuna, drained and flaked to shopping list 2 cans (6 ounces each) tuna, drained and flaked

Add medium cucumber, chopped to shopping list 1 medium cucumber, chopped

Add small onion, chopped to shopping list 1 small onion, chopped

Add mayonnaise to shopping list 1/2 cup mayonnaise

Add pickle relish to shopping list 1/4 cup pickle relish

Directions:

Cut green peppers in half lengthwise; remove seeds and membranes.

In a bowl, combine tuna, cucumber, onion, mayonnaise and relish. Spoon into pepper cups. Serve immediately.
